Winter Hymnal — Seasonal Release
A winter-appropriate duet of warmth and spice, Winter Hymnal blends two exceptional coffees into a cup that sings of cold mornings, cozy gatherings, and slow, meaningful sips.
Tasting Notes
Bright citrus and stone fruit lift from the Organic Chiapas, creating a crisp, clean backbone.
Deep, molasses sweetness and baker’s cinnamon from the Sebastian Ramirez co-fermented lot wrap the cup in warm spice.
Milk chocolate and brown sugar mid-palate, finishing with a lingering, toasted nut and clove note.
Origins
Sebastian Ramirez co-fermented, single-origin lot: processed with a cinnamon-forward co-fermentation that amplifies warm spice and syrupy body.
Organic Chiapas, Mexico: small-farm organic lot bringing lively acidity, sweet citrus, and a floral lift.
Roast Profile
Medium, tailored to balance the Chiapas brightness and the co-fermented cinnamon’s richness. Roast cuts just enough to reveal caramelized sugars without muting the origin character.
Brewing Recommendations
Filter (V60/Chemex): 1:15 ratio (coffee:water). Water temp 198. Expect bright clarity with pronounced cinnamon spice.
French Press: 1:15 ratio, 4–5 minutes brew time for fuller body and chocolate notes.
Espresso: 18–20 g dose, 35–38 second extraction to pull syrupy sweetness and warm spice for a winter latte.
Why You’ll Love It Winter Hymnal is designed for the season: lively and fragrant yet comforting and round. It’s a conversation starter in a mug — perfect for mornings by the window, slow afternoons with friends, or an after-dinner cup by the fire.
Available as whole bean and ground. Small batch seasonal release — roast-to-order while supplies last and only available until December 18th.
